Cassandre was looked down on by the “real-art” world as early movie stars were looked down on by stage stars; “You’re not really acting / creating art.” I can remember reading articles about the stage/movie thing as late as the seventies. It is an easy conclusion to jump to, I admit, but his basically ignored work does speak for itself.

I’m going to modify my crepe recipe, by cutting the flour in half though, and I have to find the lowest temperature at which water will dance in my cast iron pan.
The bottoms turned pancake colour instead of remaining scrambled egg or omelette colour; but the biggest hurdle has been overcome.
Do you not want them to brown? I like them to, but if you don’t, don’t put ANY sugar in the batter.

My crepes are quite low in flour and contain over twice as much
liquid as my pancakes.
I don’t really follow a precise recipe… I adjust for the quantity I want and what’s in the fridge…
But it’s based on a cup of flour, mixed with a half teaspoon or a little less of baking powder, and a teaspoon of sugar. Then you add a cup of milk, or half milk and half water, and two eggs, and beat it well with a fork or a mixer.
I forgot to say they hold together better if you can then refrigerate the batter for a while… An hour is good… It lets the flour absorb the liquid. Overnight kills the baking powder, but I’m not sure it matters.
When you’re ready to go, you melt a couple of tablespoons of butter in the pan, and pour it into the batter, leaving a little behind to coat the pan.
Mix it in well and if the batter has become thicker than heavy cream or chocolate sauce when you’re ready to pour it, add some milk. Any time it thickens up, in between crepes, add a bit of liquid.
For blintzes,
I use…
no leavening or sugar, one more egg, and be sure the batter is very thin. The filling is about 6 oz each cottage and cream cheeses, mixed with an egg, a little vanilla, and a couple tablespoons of sugar. They’re very rich! A batch lasts me several days… Cooked on one side, filled, folded, and refrigerated to be cooked on the outside just before eating.
Best served with a little jam or fresh fruit and sour cream.

Laundry sprays work pretty well these days.
Even 40-plus years ago, when Spray ‘n Wash was new, and my incredibly mess-prone niece was in elementary school…
a good dousing with it completely removed a close encounter with a birthday party at Chucky Cheese….
including a generous slathering of pizza sauce, and multicolored fruit and chocolate toppings from the DIY sundae bar.
