Select tiny beets.
Cut off the tops, leaving a bit of stem, wash and put in saucepan, half covered with boiling water.
Boil gently for 1/2 to 1 hour, adding water as needed.
When beets are tender cool and skin.
Place over boiling water in double boiler the sugar, flour, salt and vinegar.
Stir and blend until smooth, add cloves, cook until sauce is clear.
Add beets.
Simmer 1/2 hour.
Remove cloves, add butter, blend, and serve.
Almost all your recipes seem to be long-cooked and loaded with sugar, which is worrying.
As an occasional treat, akin to candy or pie, I’m sure these beets are tasty…
But so are steamed beets, and even shredded raw beets in salad.
And those are a real “nutritional powerhouse”, as food writers like to say, containing some vitamins and natural phytochemicals hard to get enough of elsewhere.

Long boiling kills most of the nutrients… though at least with these and those in cooked in soup, we eat the liquid, so not EVERY bit is lost…
But the phytochemicals that protect your liver and reduce inflammation in the body are long gone.

A recommended serving of fresh beets, depending on where you check, is 2/3 to 1 cup, though with all the flour and sugar, hopefully, you’d probably only eat half a cup this way, so this is four small servings.
Still…. 1/3 cup of sugar is 5 1/3 tablespoons…. which is 16 teaspoons.
That’s 4 teaspoons per person, which is about 16 grams.
There’s no recommended daily amount of sugar… it has no nutritional value…
But most recommendations are are that we consume less than 25 grams a day for a woman, 35 for a man, of added sugars, including honey and other “natural” sugars.

Half a cup… a small amount… of these way overcooked beets is no longer a healthy vegetable, but a dessert containing 2/3 of the maximum sugar we should allow ourselves in a day. 3/4 of a cup, which I’m sure I COULD eat, contains ALL of it.
I’m not saying I’m perfect… I’m sure some days I eat more sugar than I should, and I often buy beets in cans, which are already overcooked, though I try to use the liquid.
It’s just that adding extra tablespoons of sugar to everything, on top of eating sweets, is too much. I hope you don’t always!
