CREAM PUFFS Credited to: Mrs. Abram Samuels
1/2 cup butter
1 cup sifted flour
1/4 teaspoon salt
1 cup water
3 eggs
Filling
2 cups milk (whole milk 3.25% milk fat)
2 tablespoons cornstarch
1/2 teaspoon salt
1/2 cup sugar
4 eggs
1/2 teaspoon vanilla (real, not artificial)
Melt butter in saucepan, take from stove, blend with flour and salt. Return to
stove, add water gradually, stirring to a smooth paste. Remove from stove, beat
in eggs one by one. Drop from spoon to greased cookie sheet, about 2 inches
apart. Place in preheated oven, 400°, bake for 30 minutes. (Reduce to 350° during
last 5 minutes of baking.) Cool, slit sides, fill with custard or whipped cream. To
make filling, scald the milk. Sift together cornstarch, salt and sugar, add and
blend. Place in top of double boiler over hot water and cook until mixture thickens.
Cool, add egg yolks lightly beaten and vanilla. If you prefer, beat egg whites stiff
and fold in, but they can be omitted. Makes 10 or 12 large puffs.
Notes from me:
These are puffs, keep a close eye on them (quite literally, your altitude and the weather will affect the baking time). Make sure the batter off the stove is cool enough that the eggs don’t cook before they’re blended
Basically you have 1 1/2 cups of batter, to get 12 puffs use 1/8 cup per puff.
You could easily do the filling in a microwave (use a deep bowl). Use 1 minute 30 second cycles; stir after each one. When enough cycles have been used, the custard will start to thicken up, use your judgement for the last time in the microwave.
And since I see Arfside is apparently starting a New Year’s diet; I figured from figures on the internet that each of 12 puffs will be about 220 calories (the internet’s resolution was to be completely accurate from now on).

Written in 1958, he actually foreshadowed the days of cashiers not knowing what change to give (let alone how to count it up) if the machine doesn’t tell them what it is.
As a side note I nearly fell into that trap. I became so used to using a calculator to avoid doing things by hand that, one day, I caught myself using my calculator to multiply something by 10 (I know, I know, it’s disgusting); when I realized what I was doing, I immediately put the calculator down, and put my brain back to work. It took a while to recover, but I did.
Claude says “No you don’t look like Lassie, but close enough when I’m in trouble”. He wants Cleo to go tell Clara he pushed the button AGAIN! Clara will say “Sorry, I don’t understand Dog talk.

OK; took a long nap after the last lovely, but strenuous days…

But I suppose it’s easier to believe in 2022, than to believe that our favorite little basset girl is really Lassie.

Then… the fat, stubby little legs. definitely not Lassie material.
But mostly… there’s that selfish, greedy, self-absorbed, and gun-toting personality we all know and love….
