Published by: B.C. Sugar Refining Company, Limited (unknown date, but before Canada went metric)
Divinity Fudge
2 1/2 cups granulated sugar
1/2 cup ROGERS’ GOLDEN SYRUP
1/2 cup hot water
2 egg whites, stiffly beaten
1 tsp vanilla (real not artificial)
Few drops almond extract (again real)
1/2 cup chopped walnuts, almonds, or preserved ginger
Boil sugar ROGERS’ GOLDEN SYRUP and water until a little of mixture forms a soft ball when tested in cold water.
Beating continually, pour 1/2 of this hot syrup over stiff egg whites; blend well.
Return remaining syrup to heat and boil to hard ball stage, (260°F).
Slowly pour over egg white mixture.
Beat well; when thickening add flavorings, nuts or ginger.
Pour into greased pan to harden.
Notes from me:
Rogers golden syrup is a corn syrup.
Bolding in recipe is theirs.
My candy thermometer says soft ball stage is at 235°F.

And from the experience of an unwanted and unexpected ride to the hospital in an ambulance (resulting in a four day stay), do not, not, notEVER say to yourself, “I’ll just take one more anti-inflammatory.”
We should have taken a 2+ hour drive to the Bozeman airport yesterday to pick up our younger daughter, S-I-L, and our 2 youngest grandsons (2 and 4). But, they were flying Southwest, and nobody was leaving San Diego. They managed to get a stand-by flight at 7:15 p.m. to Vegas. So they spent the night and will complete the trip this afternoon. So if I don’t comment for the next few days, it’s because I can’t get enough grandson smooches.
I make this one every Christmas, but only then because if I make it more often, I’ll eat it more often.
Chocolate Fudge
4 ½ cups sugar
2 sticks margarine
1 lg can evaporated milk
3 cups (or 6 oz pkgs) chocolate chips
½ cup nuts (I used mixed pecans and black walnuts)
1/4 t salt
1 T vanilla
Mix milk, sugar and salt in heavy saucepan. Cook over medium heat, stir constantly. Bring to a boil. Reduce heat (simmer) cook for 7 minutes. Turn off burner. Stir in margarine, chocolate drops, vanilla and nuts. Beat until starts to stiffen. Pour in buttered pan.
