I find myself asking which word modifies which? e.g. Are there English Runner ducks, French Runner ducks, etc? Or are there Indian Runner geese, and Indian runner swans?

Interesting… The path ahead of the flock looks already hollowed out… and the snow around them relatively untrampled.

Were they herded into this already-created space like a corral, or a corridor, rather than being freshly lined up by the dogs?

Where are they all going in the snow?

There don’t seem to be any stragglers for the dogs to chase… They’re all like, “Hey, it’s cold! I’m not stepping out alone into that.”

I’ve always wondered why you see so much lemon food, especially sweets, and so little orange.

Lemon meringue pie, of course. Lemon cookies, pound cake, tea cakes, etc…

And on the savory side, dishes like the Italian chicken cooked with lemon and rosemary, and Greek avgolemono soup (creamy chicken maded with eggs and lemon.)

The exceptions might be Chinese orange chicken, and orange Jello, which both seem to be a bit more prevalent than lemon. Oh, and orange marmalade.

But in a fancy bakery, it’s lemons all the way.

I like oranges much better, so this cake looks good.

For years I’ve been meaning to try making an orange meringue pie.
Has anybody here done it?

It’s a weird thing in English, and maybe you already know…

But though they’re obviously tangerines, they look like the little canned ones, and for some reason, in the US we call canned tangerine segments “Mandarin oranges.”

That’s what the cans are labeled. I’ve never seen a can that says “tangerines”!

When I was a kid I asked my mother why, and she said she’d never even thought about what they were..

Since then I’ve discovered that a lot of people still don’t realize they’re not some special kind of tiny oranges

even though they obviously taste like tangerines, and we even call some tiny fresh tangerines “Mandarins” .

If canned Mandarin oranges are the only citrus ingredient in a dessert, people will still call it orange.

Don’t ask me why… I think it’s crazy!

So anyway, I was wondering what those little cans were labeled in Germany.

“Orange Cake” Serves 12

 
3/4 cups shortening (see notes)
1 1/2 cups sugar
2 teaspoons orange rind
3 eggs
2 1/2 cups cake flour
2 1/4 teaspoons baking powder
1/8 teaspoon salt
3/4 cup orange juice
1 cup grated coconut (by me: it’s for the frosting so it’s completely optional)

 
1.  Preheat oven to 350 degrees
2.  Grease 2, 8-inch round cake pans;
dust pans with flour.
3.  In large bowl, cream shortening,
sugar, and orange rind together. add
eggs one at a time; beat well after
each addition.
4.  Sift flour, baking powder, and salt
together into separate bowl.
Alternately add flour mixture and
orange juice to egg mixture.
5.  Pour batter into prepared pans;
bale for 25 to 30 minutes. Cool in
pans on wire rack for 5 minutes,
then turn out onto rack and cool
completely.
6.  Place coconut on baking sheet
and toast in 325 degree oven until
golden brown. Frost cake as desired,
then sprinkle with toasted coconut.
 
Notes from me:
Lard might be a bit heavy, I’d use vegetable; Crisco is my favourite.
Cake flour is a finer grind flour than all-purpose flour, and is readily available.

“THIN ORANGE ICING”
 
1 1/2/cups icing sugar
1 tablespoon melted margarine or butter (use butter)
1/6 cup orange juice (two table spoons + 2 teaspoons / use your eyeballs)
1 tablespoon grated orange rind

 
     Measure all ingredients into top of double boiler. Place over
boiling water, remove from heat; cover and let stand 10 minutes.
Beat icing until cool and of good spreading consistency. Will fill and
frost a 9″ layer cake.
 
Notes from me:
As the “place over boiling water, remove from heat” will probably be unclear to those new to baking, it means to heat the icing mixture until heated through and then remove from heat.
Another way is to make sure it’s stirred thoroughly, and microwave on medium heat for 30 seconds at a time until you can feel the heat on the palm of your hand held above the bowl.

Cake flour isn’t just finer milled all purpose flour, especially in Canada.

It’s ground from what’s called soft wheat, with lower gluten, hence lower protein than all purpose, and bakes up fluffier with a finer grain. It breaks down more when kneaded.

In the US we have bread flour, as well, which has higher gluten than all purpose, for a chewier texture and firmer crust, and a dough that stands up better to yeast and kneading.

Canadian all purpose flour, I’m told, is about midway between American all purpose and bread flour, and makes a tougher cake than the American version.

Though frankly, for my occasional cakes I never found a difference noticable enough to make me buy cake flour.

The “Take a Chance on Me” video has an interesting history… done by an animal shelter in South Carolina about a dozen years ago.

I remember seeing it back then, and reading about the controversy.

The people in it, staff and clients, were all volunteers, and a local production company donated their services.

It was for a fundraiser, and they didn’t expect it to go viral, but it did.

….

Then lawyers for Abba made them take it down. They tried to negotiate for the rights, but Abba said no, and it disappeared.

I remember because it was not long after the movie “Mama Mia”, which I loved, so I was upset with Abba.

….

Now it has come back in pirated versions, like the one here.

I’ve never liked that people can just post other people’s videos to YouTube, even make money off them, and give no credit to the original creators.

So tonight I googled it and discovered that the original makers, in this case, don’t care. They didn’t make it for profit, and just want their message spread, at least as of the article I read.
