When I was a kid, when we all still had black and white film cameras…
if you dropped off your roll to be developed at the BassetMart, or Longear’s Drugs….
you had to remember to check a little box on the envelope, and pay I think 73 cents extra, to get your prints in black and white instead of the normal basset sepia…

Same for the dogs if they used the human drugstore…. only I think it was 94 cents. I know they howled a little.
But I liked my prints in sepia… and the fact that the format was a bit longer… I think 4 x 7.5″ instead of 4 x 6″…
That was to accommodate long ears in portrait orientation, or long bodies in landscape.
I make this with Old cheddar, (Sharp, in American parlance) it’s an old favourite.
I’ve got nothing against Swiss cheese, I’ve made the quiche as per the recipe and it was good, but I prefer cheddar.

Quiche Lorraine France’s classic cheese pie, with bacon.
1-1/2 cups grated Swiss cheese (6 ounces)
8 slices crisp bacon, crumbled
Unbaked 9” pie shell
3 eggs
1 cup heavy cream (whipping cream 35% milk fat works well)
1/2 cup milk (whole milk 3.25% milk fat)
1/2 teaspoon salt
1/4 teaspoon pepper
Dash of cayenne
1/2 teaspoon dry mustard
Sprinkle cheese and bacon in pie shell. Beat remaining ingredients together and pour into pie shell.
Bake in moderate oven (375° F.) 45 minutes or until firm and browned. Cut in wedges and serve warm.

I always figure it’s better to feel old than to not feel at all.
Bummer! I was going out to kayak this morning, but it was raining when we got there. I’ll have to wait and see if it burns off. It’s one thing to feel old, but I don’t have to choose cold and miserable. 🙂

Another funny thing about Paul Newhound… I know he’s a handsome dog….
