The picture below is the unsweetened chocolate I have used for years (my mother always used it, so I do too).
“Baker’s” is part of the Heinz-Kraft group.
I’m so used to the recipe, that I forgot that “squares” are now rectangles (at least in Canada) of chocolate and are 1/4 ounce each.
Two squares of chocolate used to be the full two ounces needed to make the brownies.
To carry on….
The recipe is quite literally one pot, one 8 inch square baking tin. I first melt the chocolate and butter together in the pot on very low heat as did my mother (remember that unless you’re in Death Valley’s Badwater Basin… / 282 feet below sea level /… on a cold day water pretty much always boils at under 212º F) and then add the sugar, salt, eggs, vanilla, and flour (only if we’re being picky are the raisins, and/or walnuts, and/or coconut flakes) optional.
I don’t like walnuts all that much so I use only raisins and coconut flakes. It is important to remember to cool the chocolate/butter mixture to lukewarm.
When the mixture is lukewarm stir in everything else as it appears with a spatula (Mother forgot about the salt, but I do not).
When everything is mixed, scrape everything into the prepared baking tin.

As a bonus today I’m adding ‘Rinse the Blood Off My Toga’ by Wayne and Shuster (who introduce ‘Laughing’), two of Canada’s best comics; they were a favourite of Ed Sullivan, and his show is where I first heard this while we were living in Norwalk, Connecticut. Believe me, it’s fun (‘Julie, don’t go, I told him…)
As a side note, going East on the Trans Canada Highway turn right at the Brandon exit and about half a kilometre later you’re heading down the hill to the Assiniboine River (it’s a pretty little town).
